In honor of a promise that I made to Danny Kaye, I am going to post my recipe for bacon-cheese fries. Are y’all ready for this? It’s really difficult, so anyone under the age of 8 may not be able to do it.
A casserole dish (as large or small as you like)
Enough frozen french fries to fill the casserole dish
1 lb bacon
Shredded cheese
Fry the bacon and then crumble into small pieces. Follow the instructions on the bag of french fries to cook them as you normally would. When the fries are done, put a layer of fries in the casserole dish, then sprinkle cheese and bacon. Continue this layering process, putting a heavy layer of cheese and bacon on top. You can season to taste (I use Tony Chachere’s Creole Seasoning). Put casserole dish back in oven long enough to melt the cheese. Serve with your favorite dipping sauce and enjoy. It goes great with a ball game or party.
